Beans & Tatar Sandwiches Empty Beans & Tatar Sandwiches

This is a family recipe I've always enjoyed. We always called it Beans & Tater Sandwiches. This recipe can feed about roughly about 2-3 people.

You will need:

2 cans of Red Kidney Beans.
6 strips of bacon.
2 Large potatoes ( or one potato for each person.)
Corn bread mix and any ingredients needed to prepare it. (Optional)
Favorite sliced sandwich bread. (Whole Wheat usually is good)
Oil. (Sunflower, Olive, Butter, Peanut Oil would be best)


First you will need a frying pan for the bacon and a medium saucepan for the beans.

Fry your bacon and when finished place the bacon and the grease into the medium saucepan, set the frying pan aside. Next turn the saucepan on High heat and add the Kidney beans, let it cook on High for no more than 5 mins and reduce to Lowest heat. Let it cook on low for 20 mins uncovered.

When that's finished prepare your cornbread mix and pop that in the oven.

Next slice the potatoes in round or lengthwise pieces and fry them in your preferred cooking oil in the frying pan you used to fry the bacon. Fry potato slices until they are a golden brown or slightly darker for extra crispy pieces.

Next take your bread slices and either put mayo or ketchup or nothing at all on the bread and place the fried potato chips on the bread. You now have your potato sandwich.

Next pour the beans into a bowl and enjoy along with your potato sandwich and/or cornbread.
